Sweet and Sour Pork

This is not just your regular sweet and sour pork, it's more delicious.

1/2 cup rice vinegar
1 Tbsp. Sugar
2 Tbsp. Soy Sauce
1 Tbsp. Corn starch
3/4 lb. pork chops cubed
1 Green bell pepper
1 cup fresh pineapple cubes
1-2 tomatoes cubed
Salt and pepper
3 scallions
4 servings prepaired rice

Cook rice accoring to directions on the package. While rice is cooking mix vinegar, sugar, soy sauce, and cornstarch together in small bowl. Set aside. Heat oil in a skillet. Stir-fry pork for 3 minutes, season to taste with salt and pepper. Add the green pepper and cook, tossing, for 2 min. Add the pineapple and sauce and stir-fry for 2 more minutes. Add the tomatoes just before taking the dish off the burner. Now, add your chopped scallions and some salt and pepper to the rice. Serve the Sweet and sour pork over the rice!

note: of course you could always use canned pineapple for this but when we made it we used fresh pineapple and it made it soo delicous!
