Artichoke appetizer

Did you know you can microwave an artichoke?
Wash a head of artichoke. Cut stem (can also leave on as these are edible)
Cut top, and cut tips of leaves with scissors.
Sprinkle with lemon juice to keep from turning brown. Sprinkle with salt. Pour olive oil over.
Turn upside down and place in a glass bowl with a little water. Cover with microwaveable plastic wrap. Microwave 10 minutes per artichoke. After cooking for ten minutes, scoop out fuzzy center and discard. Put artichoke on a pretty plate or bowl and drizzle House Italian dressing over it. Let cool. Can serve with a wedge of brie cheese and crackers.
