Zia Via's Chicken Linguine
This is the most delicious linguine recipe from my friend Brooke. She brought some to us when the girls were born. Her Grandpa was born in Italy ad nimmigrated to British Columbia and that is where her mom was raised. This is a recipe from one of their Italian friends. Truly Italian.
Zia Via's Chicken Linguine
12-16 oz. Linguine
1 lb. chicken cooked, cubed
1 1/2 c. chopped pecans
1 14 oz. jar marinated artichoke hearts chopped
1 small (or regular 15 oz) can of asparagus spears cup up
1/4 c. finely grated Parmesan cheese
1/4 c. basil fresh or (1 TBSP dry)
salt and pepper
Top with 1 cup Bernstein Italian Dressing Original and 1/4 c. olive oil.
Directions
Cook pasta, cook chicken, cut and drain all other ingredients. Mix together. Top with dressing. Serve warm or cold.
